We roast every Tuesday on a 12kg Probat. Bags are dated, rested five days, then shipped or shelved — never older than the week before.
Three importers we know by first name. Most lots have been on our menu more than once. The Colombia is in year three.
We're a corner café, not a chain. Espresso is lighter than you're used to. Dogs welcome at the patio. Pastries from Hialeah Bakery.
